Add a CommentI'm always on the lookout for new vegan/vegetarian cookbooks, and this one intrigued me immediately. It's got recipe ideas from the "blue zones" around the world, regions in which people live long lives and healthy lifestyles. I think there was some excellent advice in here, especially if you are open to changing elements in your diet. That being said, upon closer inspection, some of the recipes seemed higher maintenance than I would have liked. For instance, the minestrone recipe in the Italian section says it takes several hours to prepare if you're using dry beans. Personally, I'm looking for something easier than that. That being said, one could probably tweak things to make the recipes more manageable.
